Goldmines in the Kitchen

I love to cook, I enjoy making magic in the kitchen. But you know sometimes, you have limited options. Rice, beans, yam, cassava… rice, beans, yam, cassava. Same old, same old! So when I discover something new, it really excites me. Have you ever discovered a goldmine sitting in your kitchen?  Do you remember how glad you felt about it? Well, let me share with you how I discovered a “goldmine” in my kitchen and how it has changed my preferences.

So, some time ago, I had seen a recipe on oat pancakes but just stored it in my mind as useful information for later. About two weeks ago, I needed to make pancakes for breakfast and I realized that I had run out of flour. Imagine my disappointment and worry about what I was going to make for breakfast for my children. I think I had even promised them that I was going to make them pancakes, so I was basically in an unpleasant situation.

And then suddenly I remembered the oat pancake recipe! I dashed to my shelf and saw this sachet of oats that had been siting there for a while. So I cleaned out my blender and milled it into fine powder and proceeded to make my oats. The entire time, I was praying that it would turn out right and that most of all, my children would like them.

I ladled the first scoop of batter onto the frying pan and while I was trying to spread it all over the pan, it just fell apart. It took some more tries and less heat and then it was perfect and ready. I tore out some and held it to my mouth anxiously, thinking to myself that if this pancake was horrible I would be in a huge mess, because now the children were running late to school and there was simply no time to make something else.

It was tasty! I layered some jam on it and the whole thing just melted into my mouth. I said to myself, “Why have I been using wheat flour all this time?” I’m telling you the thing literally melts in your mouth, and it felt good to know that it was healthier than my previous option. And my children? They kept asking for more. It was such a shame to see the plate empty afterwards. So now it’s oat pancakes for me, no more flour, if I can help it.

Sadly, I do not have a picture to share with you. You’ll just have to imagine it, but trust me, this is a true story! 🙂

UPDATE: I’ve been asked to share my recipe, so here goes!

Ingredients
Oats
Milk
Sugar
Pinch of salt
Nutmegs (you may also use cinnamon)
Flavoring (whichever one you like)
Eggs
Water
Melted butter or oil(olive, canola, vegetable)
Jam/honey

Preparation
1. Blend your oats until fine and set aside
2. Into it, add sugar to taste, a pinch of salt and some milk (if it’s powdered)
3. Grate some nutmeg into it. Not too much! Otherwise, it’ll be too spicy.
4. In another bowl break and whisk your eggs (use an egg whisk preferably or use a fork.
5. Add some water, just enough to mix your dry components
6. Add about a teaspoon of your flavoring
7. Add your milk if it’s evaporated.
8. Whisk it all together.
9. Add some oil or your cool melted butter and whisk again
10. Slowly pour the mixture into the oat flour mixture and whisk until smooth.
11. Heat up your pan
12. Scoop the batter onto the pan with a large spoon and let it cook on either side.
13. You can lather up your pancakes with jam or drizzle some honey on it.
